Salmon Cakes
Serves 2
Ingredients:
- 1 tsp canola oil
- 1 tsp butter
- 200g/6 - 8 ounce fillets, skin removed and diced
- 2 medium potatoes, cooked and mashed (I microwaved them in their skins and then mashed them, skin and all)
- 1 egg
- 2 green onions, diced
- 2 tbsp chopped fresh dill
- salt and pepper
Instructions:
- Preheat oven to 350
- Heat oil and butter in an oven safe skillet over medium high heat.
- Mix everything together and shape into patties
- Drop patties into pan
- Cook until browned and flip
- Place skillet in oven and cook 7 - 10 minutes until cooked through
- Serve with some yogurt sauce
